Ingredients
- 110g self-raising flour
- 40g caster sugar
- 1 teaspoon ground ginger
- Half a teaspoon bicarbonate of soda
- 50g unsalted butter or margarine
- 2 tablespoons golden syrup
How to make
- Preheat the oven to 180°C/Gas mark 4.
- Sift the flour, ginger and bicarbonate of soda into a mixing bowl.
- Add the sugar and lightly rub in the margarine until the mixture is crumbly.
- Add the syrup and mix everything together to form a stiff paste.
- Divide the mixture into 16 pieces about the same size as each other and roll each piece into a little ball.
- Place them on a lightly greased baking sheet (or sheets), leaving plenty of room between them because they spread out a lot when they are cooking.
- Flatten each ball slightly with the back of a spoon and bake just above the centre of the oven for 10-15 minutes.
- Cool on the baking sheet for 10 mins then transfer to a wire rack to finish cooling. Store in an airtight container.
