Ingredients

  • 110g self-raising flour
  • 40g caster sugar
  • 1 teaspoon ground ginger
  • Half a teaspoon bicarbonate of soda
  • 50g unsalted butter or margarine
  • 2 tablespoons golden syrup

How to make

  1. Preheat the oven to 180°C/Gas mark 4.
  2. Sift the flour, ginger and bicarbonate of soda into a mixing bowl.
  3. Add the sugar and lightly rub in the margarine until the mixture is crumbly.
  4. Add the syrup and mix everything together to form a stiff paste.
  5. Divide the mixture into 16 pieces about the same size as each other and roll each piece into a little ball.
  6. Place them on a lightly greased baking sheet (or sheets), leaving plenty of room between them because they spread out a lot when they are cooking.
  7. Flatten each ball slightly with the back of a spoon and bake just above the centre of the oven for 10-15 minutes.
  8. Cool on the baking sheet for 10 mins then transfer to a wire rack to finish cooling. Store in an airtight container.
