A great, portable snack or dessert for on-the-go. This is a quick, easy recipe with no cooking involved, but you will need a food processor. They store well in the fridge and will last up to 3 days

Ingredients

  • 100g oats
  • 50g carrot (about half a carrot)
  • 50g nuts (or sunflower seeds)
  • 50g sultanas
  • 1 tablespoon jam (or honey, or golden syrup)
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon cinnamon
  • 3 tablespoons desiccated coconut

How to make

  1. Soak the sultanas in small bowl with some warm water.
  2. Grate the carrot.
  3. Add oats, carrot, nuts (or seeds), sultanas, jam (or alternative), vanilla (optional) and cinnamon into the food processor and blend until it becomes a dough.
  4. Scoop a tablespoon of the dough and roll it into a small ball in your hands.
  5. Fill a bowl with the coconut.
  6. Cover each ball with coconut by rolling it in the bowl.
  7. Put them in the fridge.
