A great, portable snack or dessert for on-the-go. This is a quick, easy recipe with no cooking involved, but you will need a food processor. They store well in the fridge and will last up to 3 days

Ingredients
- 100g oats
- 50g carrot (about half a carrot)
- 50g nuts (or sunflower seeds)
- 50g sultanas
- 1 tablespoon jam (or honey, or golden syrup)
- 1 teaspoon vanilla extract (optional)
- 1 teaspoon cinnamon
- 3 tablespoons desiccated coconut
How to make
- Soak the sultanas in small bowl with some warm water.
- Grate the carrot.
- Add oats, carrot, nuts (or seeds), sultanas, jam (or alternative), vanilla (optional) and cinnamon into the food processor and blend until it becomes a dough.
- Scoop a tablespoon of the dough and roll it into a small ball in your hands.
- Fill a bowl with the coconut.
- Cover each ball with coconut by rolling it in the bowl.
- Put them in the fridge.
